'Greens ingredients: - 2 thick bunches of fresh collard greens (or 2 bags of collard greens already cut) - 3 lbs of smoked neck-bones (or smoked pig tails, smoked turkey necks, or smoked ham hocks) Green ingredients (seasonings) - 2 teaspoon of salt (more if needed) - 1/8 teaspoon of sugar (or a pinchI) - 1 to 2 teaspoon of red pepper flakes (more if needed) - 1 tablespoon of vinegar (white or apple cider) - 2 to 3 tablespoon of lard (Morrell’s or Armour) - Note: or 2 to 3 tablespoon of vegetable oil Instructions - Let the meet cook until tender for 35 mins - Then add in your collard green with all seasonings and oils - Cover until the greens has sweated down; Remove lid and stir around until everything is has come together - Put lid back on boiler; turn on medium heat for an hour until pork is done'
